This may sound like a cliche but as a young boy I have always loved art (drawing, painting, sculpting) but I did not want to be a starving artist, so I became a Chef. Using food as my paint and my plate as my canvas.
I also had another passion "working out" (which gave me the ability to transform body) and finally competing at the age of forty. I hired a trainer and started the transformation. Not realizing that all these years of training only gave me twenty percent of the desired look I wanted, it was actually the food that would make the biggest difference. When It came to food it was the what (what do I eat?), when (when do I eat the food?), and how (how much do I eat?/ portion?). Diet food is great when you are competing but not for everyday life. People need variety, great taste and presentation to their food. After my first competition it had dawned on me that taking my years of knowledge with cooking and my new knowledge of nutrition and creating the food we all love, but "healthier".
